Food Friday: Sweet-Potato French Toast

I like to keep some orange puree
and green puree in the fridge at all times.
That way I can slip some veggies into whatever meal we'll be having for dinner (or in this case, breakfast).

This breakfast (which my kids L-O-V-E) uses some sweet potato puree.


You add 1/2 c. of sweet potato puree
to 4 eggs and mix them up.


Next dip your whole wheat bread in...


and fry the bread in some hot olive oil.


Flip it and let it cook till it is light brown on both sides.


I dab my finished toast on paper towels so the french toast doesn't seem greasy.


Serve this with 100% maple syrup and you don't have to worry about your kids getting too much processed sugar!


My kids absolutely love this breakfast and I feel good about serving sweet potatoes and whole grains first thing in the morning ;)

oh goodness, this looks so delicious. i think i will take this on a road trip with me! im driving to austin in a couple weeks to meet up with my mom and 2 sisters, and they love it when i cook breakfast.. im sure this would be a hit! thanks for posting the recipe!
